Mini Turkey Meatloaf Muffins with Ketchup “Frosting”!

Mini Meatloaf Muffins with Ketchup Frosting

Dudes around the world drool when they hear “mama’s meatloaf,” which is why Whitney and I want to warm stomachs with a cleaned up version of yo Mama’s specialty!

These mini muffins are the perfect appetizer at a holiday party, great for an “on the go” snack (yep, I don’t know about you but I like to whip meat out of my purse), or a great way to please your honey’s palate (well, unless of course she is a vegan or a vegetarian – then you’re in trouble).

Ladies, you too can bake up this recipe, in some festive attire as well (your dude will love it), and please your man’s desire for his longtime “warm belly” favorite food staple! This recipe will definitely have him reminiscing… And then some!

Stop loafing around and get cooking! Here’s what you need!

  • 1 Pound Lean Ground Turkey Meat (if you are vegetarian/vegan, you can use meat-free [preferably without soy] meat)
  • 1 Egg (you can use flax “egg”)
  • 1/2 Cup Onions
  • 1/2 Cup Mushrooms
  • 1/2 Cup Green Bell Pepper
  • 1/4 Cup Shredded Carrot
  • 1 Tsp Thyme
  • 1 Tsp Rosemary
  • 1 Tsp Mustard
  • 9-12 Tsp Low Sugar Ketchup (to spread on each “muffin”)

These muffins won’t leave you with the “inevitable” holiday muffin top so many people complain about!

  1. Gigi, love this festive holiday post! I am actually known for whipping my “meat” out of my purse and backpack! I am constantly pulling chicken breast, coldcuts, or even quite a few times, ground turkey out of my bag, hey a girl’s gotta get her protein right?

    • I AM KNOWN for whipping meat out of my purse too! People always look at me like I am the owner of an Italian deli or something, LOL!!!! A girl CERTAINLY needs her protein, so I am gunna KEEP ON DOING IT!

  2. Looks easy enough! Is there a good substitute for ketchup? One of my fave meals my mom used to make is corn beef and cabbage and roast beef. I never attempt either. At Christmas I tend to like the exact same food as thanksgiving. I’ll probably go to Whole Foods and get a meal for myself and watch movies on Christmas day. Sad. :) lol!

    • You can use tomato paste if you would like, and if you want to make it a little sweeter, add a pinch of stevia! Then you can slather the paste right on top. I actually wanted to use it instead, however, we figured “dudes” would like ketchup or BBQ sauce more! ;)

      And if I could, I WOULD eat the same thing from Thanksgiving too – TOO BAD my family doesn’t really like turkey! :(

    • It’s funny, a lot of people say they aren’t a fan of meatloaf – it’s just like a burger, except baked! lol. You must TRY MY MEAT COMBO – lmfao!

    I do think Mr. and Mrs. Claus still have an active sex life. I think it probably suffers during the winter, like so many people’s sex lives suffer during times of tons of work and time bending and list-checking and coal-stuffing. Or something.

    I don’t whip meat out of my purse but I usually have fruit in there, most often a banana. Eating Ungracefully in a big old sweater in front of the tv by myself is a real treat, lol.

  11. First off I have to say I remember the “crazy ketchup girl” so low sugar it is. I think Santa leases the elves out to May Kate and Ashley to make cloth’s and eye watering perfume in the off season. The meat muffins is a unique twist an beats the old stand by loaf shape. I actually had your spinach dish again tonight with turkey breast, next time meat muffins, I like typing that for some reason :/
