You’ll Flip Over These Sweet Pancake Recipes!

I ran into an “arch nemesis”* I’ve had, since I was running around in Huggies, the other day at the grocery store.

Literally… Ran into.

I caused a bit of a scene, actually. A few tomatoes sadly met their demise. 


Clearly I am as suave as a bat.


Anywho… This “enemy” of mine, with a rather interesting orangy-brown tan, I might add, just stared at me, with what seemed like an almost terrified expressionAs if I might attack.

Rest assured, though, for I was NOT being filmed for an upcoming episode of Bad Girl’s Club. In fact, I am truly not one to ever experience confrontation in my life, and to be honest, after all these years of us not being on “speaking terms”, I sort of forgot why there was so much animosity to begin with.


To rectify this situation of ours… I invited my long time foe over to where THE MAGIC HAPPEN (ahem, my kitchen people, MY KITCHEN) so I could attempt to chuck out this bitter taste I’ve had in my mouth for years!


I also really wanted to know the tanning salon my “antagonist” frequents so I could write a 1-star Yelp Review, cause you know… Yelp Elite status holds clout.

And I mean… Where’s a better place to get rid of an unpleasant flavor in your mouth than… In the kitchen?


Luckily my invitation was very well received… And we wound up making some SWEET recipes that my now confidant is pretty savvy with!

I yam insanely impressed and hopefully all of you will be too! 

Sweet, Sweet Potato Pancakes


This is sweet! 

  • Combine all ingredients into a blender and whirl away.
  • Grab a non-stick skillet and turn on your burner to medium high heat.
  • Spray your pan with non-stick spray (for extra non-stickiness) and pour your batter into the pan. You can make one giant pancake for several little ones. I made three… It’s my lucky number!
  • Cook cakes for roughly 5 – 7 minutes per side. Keep your EYE ON THEM or else you will burn then! If you walk away to attend to something else…. You. Will. Burn. Them. 
  • Plate and chow… Or throw into a plastic bag and out the door you go!

Sweet Potato PancakesSavory, Sweet Potato Pancakes 


  • 1/2 Sweet Potato
  • 1/4 Lbs Ground Grass-Fed Bison
  • 1 Bunch of Spinach
  • 1/2 – 1 Tbs Greek Seasoning

Savor these cakes…

  • Combine all ingredients into a food processor and pulse continuously until all ingredients are blended.  
  • Grab a non-stick skillet and turn on your burner to medium high heat. 
  • Spray your pan with non-stick spray (nothing makes me madder than when 1/2 the food stick to the pan!!) and place your meat pancakes into the pan… You can make a monster cake or several little ones. 
  • Cook cakes for roughly 5 – 7 minutes per side. I personally like to cook for less time because bison medium-rare is perfection! 
  • Plate and serve with sugar-free ketchup or…… A sunny-side up egg… Or throw into a plastic bag and jet to wherever you need to go!

    I never liked them, but I’m ok with them as savory recipes other than sweet. Like marshmallows! ha!
    Oh, and when I was pregnant with Scarlet, I couldn’t even look at kale. Or even really.. trees.. because they reminded me of kale.
    I got over it, though.

    • Yeah, I would need to google the difference between the two as well, but I think YAMS are bigger than sweet potatoes. Meh, whatever – they both taste the same, right? Maybe YAMS were my arch nemisis….. Hmmmm..

      And um, KALE kind of makes me wanna gag even though I am not pregnant so, I don’t blame you at all! HA!

  8. There are so many food that used to make me gag – beets, brussels sprouts, carrots. Now I love them all – especially roasted!

  10. If I see sweet potatoes at the grocery store, I always perform my happy-happy dance! I mean, I LOVE SWEET POTATOES. Eat them err day all day 😉 I’ve only tried sweet potato pancakes once and it didn’t go well because there wasn’t enough sweet potato! I have to give sweet potato pancakes another chance. Definitely have to try these BOTH out! Could I substitute the bison for turkey?

I figured everyone likes them because they taste like sugar (at least to me they do). Both of your recipes look and sound delicious! Can’t wait to try them, especially the sweet one. I don’t use a lot of stevia so do you think coconut sugar would work as a substitute? Or maybe just a touch of maple syrup in the batter??

    • Oh girl, I should have punched the sweet potatoes across the kitchen, LOL!!!!! That would have been hysterical. You never know what could happen in the near future though! And you could definitely use coconut sugar in the recipe! Let me know what you think!

  17. Loved this and can’t wait to try this! I had a sweet potato craving last weekend but my kids don’t really like them. so I have to be stealthy. I chopped a bunch up with idaho potatoes then oven roasted them with onions and garlic but my goal is to eventually wean them over to just sweet potatoes!

  19. I love these !!! sweet potato’s or is it sweet potatoes :) either way great idea with ground meat. You gave me the perfect power food idea for a 24 hour CrossFit and Ju-jitsu fund raiser we will be doing in about a month. These will keep well after cooking and not be to heavy on the stomach. I might go with natural maple syrup for the energy factor but we will burn it up for sure. Landon will be in my mind inspiring me to push thru with his can do attitude, again his run was amazing.

    • I haven’t really ever used tapioca flour before, but I loved how fluffy it made the cakes!!
      As for stevia, it’s amazing, but a little goes a long way!

  85. For the longest time I couldn’t eat anything that tasted like a banana unless it was actually a banana. I didn’t even like Banana Bread.

    We love sweet potatoes here (and yams) and we’ll put them into our kitchari. The girls prefer when we slice them into coins (and sometimes use cookie cutters to make them into shapes and then bake them for fries.

  96. I feel the same way you do about sweet potatoes but with celery. I can’t even smell it without gagging. The only time I can even tolerate it is when it’s diced into little bits and put in dressing for Thanksgiving.

    • ACTUALLY you’re kinda on to something. Back when I used to eat CRAP LOADS of spaghetti squash…… I was a slight shade of orange, NO JOKE! I was eating my “spray tan” – ha! People never tell me I look like an OOMPA LOOMPA though, they do tell me I look like a monkey though. HA!
