You could certainly sub the bacon in the recipe – you can either ditch it completely or use a healthier, grass-fed beef bacon or a turkey bacon, whichever you would prefer! 🙂 Hope you made the spinach dish this evening!

Good costumes girls! There is nothing better than a hearty dose of laughter in a cold autumn evening. I like your Thanksgiving alternative menus. They both seem so fresh and nutritious! Do you think I can substitute the bacon in the recipe? I am not a fan of pork but would like to make it anyway. I love the sautéed spinach with shallots and cherry potatoes. This is an ideal side dish not only for Thanksgiving.
