A lot of people think I am kind of nuts.

My rebuttal to this claim is typically:

If the saying, you are what you eat, holds true… Then I am 100% NOT nuts… Because I cannot eat them!

However… Some might consider coconut to be a nut (NEWSFLASH: it’s a fruit), and as you all may very well know at this point, coconut byproducts are my go-to staples for pretty much all of my recipes (although I have yet to make coconut burgers).

To be completely honest, I cannot help but notice that I am actually starting to transform into one of those hairy hard balls that hang from palm trees…

If you’re like my cooking companion (who adores VEGAN NACHOS just as much as I adore my salmon skin handrolls) this week, though… (Although we actually didn’t cook anything, we used the freezer to make our creation… So freezing companion???)… That above “forno” may not turn you on…

COCONUT LIME POPSICLES

Coconut Lime Popsicles

Put the lime in the coconut…

  • Grab your blender.
  • Throw all the ingredients into it.
  • Whirl away.
  • Get your ice cream mold (we used awesome ring pop molds!), pour mixture into it and freeze for 12-24 hours!
  • Hey, Mr. Science guy… You impressed?!

SO TELL ME…

Second, I may have to apply for the best home cook myself considering me and Mark Steines and I engaged in some flirtatious banter pre-show (via a skype connection hahaha) when they cooked one of my recipes on air and I yapped in the background from a TV screen #awkward. . .. so what happened to Christina I wounder, looks like she got the host boot!

You coco-nuts lady. Stupid, terrible joke, but at least here it is applicable due to your lack of being able to eat nuts.

    Oh, and as a kid, I basically became a carrot. I didn’t have carrotemia, but I was a little orange lol

    • AH HA HA HA! I remember when I used to eat TONS AND TONS of squash – I was totally an ORANGE TINT! Sadly, I have had to cut back on all fiber – THANKS STOMACH – so now I am as white as…. Well, coconut meat!

    Being from the north, I remember first seeing a coconut as a teen on a family vacation to Miami Beach. Used one for a door stop for years. I’m not a big fan of coconut, don’t really like the taste. Lime on the other hand..key lime pie is the Florida favorite.

    • I think the first time I ever saw a coconut was in Miami too!! HA! I did not use it for a door stop though. LOL!

      Honestly, I hate COCONUT FLAKES – but all other coconut products are a WIN to me! 😉

    • I know, my composure does NOT last very long, that’s for sure! LOL!!!!

      And FROZEN BLUEBERRIES – I used to DOWN bags and bags of them when I could when I was younger… At least Willy Wonka and the Chocolate Factory gave you an example as to what you will look like when you turn into one!

  23. I love lime – it’s so refreshing. I’m not sure about coconut – but I adore you! Right now the only coconut thing I like is Chobani yogurt. Coconut water tastes like old gym socks to me … if I knew what those tasted like. But I do like curry made with Coconut milk, so I will give this a try!

    • Actually, that’s one thing I have never had before Coco – COCONUT WATER!! But coconut milk is amazing!!! You must try it out! :)

    • Hmmm the last time I had honey was about 15 years ago, so I am not entirely sure about the flavor, but hey, it’s all about experimenting in the kitchen so I say GO FOR IT and see what happens!!

    • I AM BEYOND THRILLED to hear this!!!! Coconut is such a great replacement for so many things, including “naughty” foods – he he! And you certainly can eat these pops without any guilt at all, just like the coconut milk ice cream recipes I have on the blog too… I actually tend to eat those for dinner! 😮

  49. I love combining peanut butter and nutella with vanilla ice cream for an extra rich treat! You can only eat a couple bites at a time because of how rich it is.

    I’m the classic blend banana type of girl for a quick vegan ice cream fix. I usually mix in some matcha powder to make some green tea deliciousness.

    Yum! They sound so refreshing and would love to try them except I can’t have any citrus. I so make ice-cream & popsicles with coconut milk & coconut flakes. I use coconut milk for quite a bit I love it too. With a little natural sweeteners you can use it to make delicious recipes and I can’t begin to tell you how much organic coconut oil I use on my body and for cooking & baking.   67. Believe it or not the last items I put in my blender is some garbanzo bean, garlic , lemon, tahini and olive oil to make hummus, in fact it was the last three times. I guess thats my favourite thing to put in the blender as that is a common occurence

    • You could certainly use lemon. I just don’t like lemon myself 😉 But if you do – GO FOR IT!!! Whatever makes this recipe EVEN easier!

I tried making the coconut peach ice cream with almonds and would offer this bit of advice: rather than mix the microwaved peach + amaretto mixture into the ice cream, cook them first with some sugar and amaretto. My first attempt yielded delicious coconut ice cream mixed with chunks of peach ice cubes. Cooking down the water in the peaches beforehand will hopefully solve that problem.
