This ICE Is Nuts

A lot of people think I am kind of nuts.

crazy gigi

My rebuttal to this claim is typically:

If the saying, you are what you eat, holds true… Then I am 100% NOT nuts… Because I cannot eat them!

GiGi Thinking

However… Some might consider coconut to be a nut (NEWSFLASH: it’s a fruit), and as you all may very well know at this point, coconut byproducts are my go-to staples for pretty much all of my recipes (although I have yet to make coconut burgers).

To be completely honest, I cannot help but notice that I am actually starting to transform into one of those hairy hard balls that hang from palm trees…

GiGi Coconut Tree

I just can’t stop and won’t stop gobbling it up.

Oh wow… It sounds like I am a part-time porn star.

Man, just wait until you watch the latest videoThere are face shots involved…

Yes, lime juice… Made a direct hit in my eye!

If you’re like my cooking companion (who adores VEGAN NACHOS just as much as I adore my salmon skin handrolls) this week, though… (Although we actually didn’t cook anything, we used the freezer to make our creation… So freezing companion???)… That above “forno” may not turn you on…

So how about this…

leslie durso donuts

Moist. Lucious. VEGAN. Donuts.

Yep… If you thought I was a genius in the kitchen (I advise you to seek medical attention if that is, in fact, the case)… Then Leslie Durso is a downright food Einstein and gives Bill Nye a run for his money!

Bill Nye the SCIENCE GUY

Who else just read that with his signature tune?!

Speaking of signatures… If you want one, feel free to email me your request (I kid. I kid)… This week, I hopped on over to Leslie’s kitchen where we made what I feel like will soon be our signature recipe as it was utterly delicious and refreshing as well as vegan and GiGi-approved!

Coconut Lime Popsicles

Put the lime in the coconut…

  • Grab your blender.
  • Throw all the ingredients into it.
  • Whirl away.
  • Get your ice cream mold (we used awesome ring pop molds!), pour mixture into it and freeze for 12-24 hours!
  • Hey, Mr. Science guy… You impressed?!

  • Have you ever put the lime in the coconut?
  • What’s your favorite cool-down treat?
  • Are you a Bill Nye fan?
  • What’s your favorite combo to whirl in your blender?
  • What food are you slowly transforming into because you eat it so much?

Leslie GiGi Coconut Lime

  1. Sounds delicious! I drink coconut water but that’s pretty much it with coconut ha

  2. Those popsicles sound delicious! I LOVE coconut so if you figure out a way to make a coconut burger (preferably vegetarian), I am IN!

  3. Food porn is absolutely an art! You’re the best kind of crazy.

  4. These look good and so easy to make….just watch your eye!

  5. First of all, those lime coconut milk pops — yum! Second, I may have to apply for the best home cook myself considering me and Mark Steines and I engaged in some flirtatious banter pre-show (via a skype connection hahaha) when they cooked one of my recipes on air and I yapped in the background from a TV screen #awkward. . .. so what happened to Christina I wounder, looks like she got the host boot!

  6. You ARE a genius in the kitchen silly! Haven’t you heard the geniuses are normally a little weird (but in the best way of course)?! You should totally try out for The Next Food Network Star!

    • Oh man, I remember when I interviewed Giada, she told me to do the same thing, but I don’t think my culinary chops are to where they should be for that show!!

  7. girl, you look great as a coconut. how can i replicate that look?!
love how simple these are – lime+coconut is the BEST combination for summer!!

    • Ah ha ha! You just have to keep on eating coconut products – you will eventually look like a coconut – ah ha ha ha ha!!!

  8. Oh man I love coconut & lime! Can’t wait to try this when I get back from Portland!

  9. I’m just glad that Bill Nye is also brilliant in real life and will go ape on you if you challenge him or say something stupid. And yes to lime (on everything) and coconut (also, everything). You coco-nuts lady. Stupid, terrible joke, but at least here it is applicable due to your lack of being able to eat nuts.

Oh, and as a kid, I basically became a carrot. I didn’t have carrotemia, but I was a little orange lol

    • AH HA HA HA! I remember when I used to eat TONS AND TONS of squash – I was totally an ORANGE TINT! Sadly, I have had to cut back on all fiber – THANKS STOMACH – so now I am as white as…. Well, coconut meat!

  10. Yum – these sound delicious! I also LOVE Bill Nye – yay for science!!

  11. Yum! These sound creamy and delicious.

  12. Love the flavor combo — these sound so refreshing! And you can’t beat 3 ingredients…

  13. YUM! These sound amazing–thanks so much for sharing (PS: love how much fun you always have in your posts). XOXO

  14. Cold watermelon is the best on a hot day!

I do eat a lot of popcorn.

    Bill Nye is great..and smart!!

Being from the north, I remember first seeing a coconut as a teen on a family vacation to Miami Beach. Used one for a door stop for years. I’m not a big fan of coconut, don’t really like the taste. Lime on the other hand..key lime pie is the Florida favorite.

    • I think the first time I ever saw a coconut was in Miami too!! HA! I did not use it for a door stop though. LOL!

Honestly, I hate COCONUT FLAKES – but all other coconut products are a WIN to me! 😉

  15. I used to watch Bill Nye all the time! Characters he’s played in movies just seem weird.

  16. I’ve heard this some where before. Your attempt to have composure was very amusing I was waiting for you to just break loose and tear her kitchen up :) Your type “G” personality can’t be suppressed. I like cold green or black tea, gun powder tea is awesome :) very potent. I should turn into a blueberry soon I love them ice cold.

    • I know, my composure does NOT last very long, that’s for sure! LOL!!!!

And FROZEN BLUEBERRIES – I used to DOWN bags and bags of them when I could when I was younger… At least Willy Wonka and the Chocolate Factory gave you an example as to what you will look like when you turn into one!

  17. I shared your contest on my facebook page. I’m not totally sure how to vote.
I feel boring, vanilla ice cream is my go too.
    Love Bill Nye fan!
I am almost certain I will wake up one day as a pizza and then a cannibal because I’ll eat myself.

  18. Grew up in Jamaica with coconut trees just about everywhere…which means I have had the fruit/nut in every conceivable form. Take that anyway you like GiGi. LOL! Another funny and informative post. :)

  19. Not only did I read that in Bill’s tune, but I finished the entire song! I love lime and coconut, and this recipe is legit the easiest popsicle recipe I’ve seen yet. Gotta get me some molds and freeze away!

  20. Coconut is life. I am OBSESSED. Too bad my lame husband hates the taste. Welp, too bad, I’m making everything with it. Lime juice in the eye sounds dangerous – work hazards…sigh

  21. Food porn is absolutely an art. So cute

  22. These sound awesome!!! And yes, I have put the Lime in the Coconut, but not like this…can’t wait to try them!! :-)

  23. I love lime – it’s so refreshing. I’m not sure about coconut – but I adore you! Right now the only coconut thing I like is Chobani yogurt. Coconut water tastes like old gym socks to me … if I knew what those tasted like. But I do like curry made with Coconut milk, so I will give this a try!

    • Actually, that’s one thing I have never had before Coco – COCONUT WATER!! But coconut milk is amazing!!! You must try it out! :)

  24. OMG, I need that ring pop mold! My daughter would go (coco)nuts for it! I hope your eye has recovered from that money shot :)

    • LMFAO!!!!!!!!!!!! I wish I actually got MONEY for getting lime juice in my eye! Ah ha ha ha ha ah!

AND YES you doooo need this mold! We got them at Target, however, I saw some awesome ones at Whole Foods the other day!

  25. Yum! I’m more of an ice cream girl than a popsicle girl, but these look totally creamy with that coconut milk. If I was a food… I’d definitely be a jar of peanut butter. I’ve been addicted since I was in kindergarten. 😛

    • Think Creamsicles!! That’s what these are like – LIME style :)

And um, if you’re a jar of peanut butter- everyone must ADORE YOU! haha!

  26. What blender????? :) I signed up for your dream job site but can’t figure out how to like DOH!!!!! I did comment though!

    • Thanks Jody! I am probably going to have to re-submit to the contest anyways, so I will keep you posted about that :) I ALWAYS appreciate your constant support!!!

Blender = Vitamix… However I have a Ninja that kicks butt as well as a Breville!

  27. I squeeze a LOT of lemons and limes (for cocktails, you know) and I’m always squirting myself in the eye. Good aim, huh? :-) And somebody somewhere needs to invent a coconut burger! Anyway, great popsicles — thanks.

  28. You guys rock and should collaborate ALL the time! The popsicles look delicious and I want to see these coconut burgers!
Favorite cool down treat is ice cream while in the pool, lol. It’s unbearably hot here today and I made soup for a Fall blog post! Ackkss!

  29. ROFL! Love reading your posts! You are 100% crazy but a great crazy. LOL!

  30. Ummm, so that pretty much means I AM nuts because I eat so many of them.. and coconuts too 😛

But that’s okay because both are delicious… especially these popsicles. HELLLLOOOOOOOOOO heaven!

And please invent a coconut burger… I’d be all over that!

  31. The coconut lime Popsicles look delicious!

  32. Recently made lime- coconut-banana posicles. Unfortunately they were virgin ones. Definitely needed some rum.

  33. Seeing you transform into a hairy hard ball would make my life. No joke.

  34. I could make these and freeze them as ice cubes couldn’t I?

Then pop them in my Gin n Tonic!! 😀

  35. Yummy! I absolutely love coconut and lime – cannot wait to try this and put them together.

  36. Perfect summer recipe. These popsicle are so creamy and delicious and just 3 ingredients – amazing :-)

  37. Super random, but my mom’s cat is a popsicle fiend! And he loves lemonade and limeade! I’m going to have to share this with her. Maybe she can put the little ring pop around his paw lol

  38. This sounds so tasty! :) LOOOOOVE your posts!

I would love for you to share this with my Facebook Group for crafts, recipes, and tips:

Thanks for joining Cooking and Crafting with J & J!

  39. Yum! I jumped on the coconut bandwagon with the Whole30 and haven’t looked back. These sound super yummy, and I love the ring pop molds!

  40. Yummm!!! My fave combo and so refreshing :)

  41. I most certainly have put the lime in the coconut!!
Where would you be without coconut?? That’s what I’d be without apples. Life without apples is no life for me.

    • OMG if I didn’t have coconut, every recipe on this blog would be same or ground beef – LMFAO… Salmon cookies anyone?

  42. So tropical and love the ring pop mold. ouch lime juice in the eye but great flavors!

  43. bahaha, I had the SAME problem with that kind of can opener at first! #YoureNotAlone

but kindaaaa nuts may be an understatement 😛 Can’t wait for NOVEMBER.

    • BAH HA HA HA AH AH HA HA AH AHA!!! How many blonds does it take to open a can…..?

AND I CANNOT friggin’ wait for NOV too! I am so so so so so happy you’re coming 😀

  44. I’m not a fan of coconut but those donuts look yummy. Couldn’t figure out the like from my iPad but wishing you all the best.

    • OMG OMG OMG! JOI!!!!!!!!!!! I haven’t heard from you in so so so so so long!!!!! How are you!? I need to go visit your blog ASAP!!! 😀

And yeah, it seems as though you can only LIKE applications on your smart phone! So weird!

  45. I could give up nuts for the rest of my life, but coconut??? No way! Your popsicles will be perfect as we reenter to broiling Midwest this weekend!

  46. Yummm, coconut and lime are sooo good together. :) Could I substitute a little bit of honey for the stevia, or would that change the flavor too much?

    • Hmmm the last time I had honey was about 15 years ago, so I am not entirely sure about the flavor, but hey, it’s all about experimenting in the kitchen so I say GO FOR IT and see what happens!!

  47. I can’t wait to try this. I am all about the coconut. I have lost a lot of weight and coconut is part of the reason. i have been desperate for a yummy summer treat I can eat without guilt!

    • I AM BEYOND THRILLED to hear this!!!! Coconut is such a great replacement for so many things, including “naughty” foods – he he! And you certainly can eat these pops without any guilt at all, just like the coconut milk ice cream recipes I have on the blog too… I actually tend to eat those for dinner! 😮

  48. Loving this recipe! Question: since these are healthy popsicles, can I eat the whole batch by myself in one sitting? It’s so hot here that I’m just going to sit in the pool all day Saturday and eat a bunch of these pops. Clicking on that link to vote for your app on that dream job. Thinking positive thoughts that you will win! :)

    • Yes. Yes you can eat a whole batch. OMG on Monday I am posting a Monday Munchies about coconut milk ice cream and how I eat… THE WHOLEEEEEEEE THING!! LOL!!! And thank you for the support Karrie, I really really really appreciate it!

  49. I love combining peanut butter and nutella with vanilla ice cream for an extra rich treat! You can only eat a couple bites at a time because of how rich it is.

  50. You know what? If you can’t have fun in life and laugh a little, you’re not living. :)

Isn’t coconut ice cream the bestest!? Me loves! I’m totally looking up that vegan nacho recipe. That sounds DELISH!

Have a great weekend goofball. :)

    • Girl, then this means I live to the EXTREME because never a moment goes by where I am not having fun! 😉 — Even if I am having a bad day, I always manage to smile, ha! And yes! Go check out Leslie’s vegan nachos, I am pretty sure they’re ON POINT = AMAZING!!

  51. These popsicles look so yummy, simple AND kid friendly! YUM!
I tried to “like” your Best Home Cook application, but I couldn’t for the life of me figure out how to like it??? Those avocado brownies sound delish too!

    • UGH I know – I think you can only like the APP on your phone – it’s so annoying and so NOT user friendly :( I really really appreciate your wanting to like my submission! :) Comments are always always and always appreciated!

  52. Aww, I miss Bill Nye’s TV show!!

Your post is making me so effing hungry. :[ You win. I’m making dinner. (Finally.)

  53. Sounds so good.

  54. OMG only 3 ingredients! Wow, I’m going to have to try this, my daughter and I would eat them up! :)

  55. You’re so cute! And those vegan donuts are gorgeous.

  56. Ummmmm… NO. You ARE TOTALLY NUTS. It’s part of your charm. 😉

  57. Yummy! I would love to try this out, and I have a feeling I’ll be the only one eating all of these because my husband is allergic to coconut everything. And I’m ok with that.

I’m the classic blend banana type of girl for a quick vegan ice cream fix. I usually mix in some matcha powder to make some green tea deliciousness.

    • Sadly I cannot eat bananas but man do they look amazing as ice cream!!! Envious of your creations however coconut milk ice cream is insanely delicious so at least I have that! 😉 And um, is it bad to say that I am actually THRILLED your husband cannot have coconut, because um, you will NOT want to share these! LOL!

  58. AH! That hoodie though! You are so completely adorable!
Vegan popsicles! Yes, please!!! Oh I love coconut & lime as a combo and I was just given some hand-me-down popsicle molds. That’s pretty great timing if I do say so myself =)
I can’t wait to make these. I don’t typically eat ice cream, but we’ve been enjoying some vegan So Delicious cookie dough lately with the hot weather. Yum.
Totally going to check out those vegan nachos…

    • WHAT do these popsicle molds, that you got, look like?!?! Anything special??

And I recently got some So Delicious Sugar-Free Vanilla Ice Cream. I have only had a tiny bit because I have to restrain myself (because I will totally eat the WHOLE PINT)… And WOW – it’s delicious!!!!

      • Nah – they aren’t special. They aren’t super cute ring pops haha
I’ll make your popsicles and share a picture and tag you though =)
OMG isn’t So Delicious AMAZEBALLS? I try to just eat a bit at a time too. Soooo we basically can’t buy it very often haha ;p
ps. Thanks for sharing at Healthy Vegan Fridays – I’m pinning & sharing
        pps. lime face shot bwahahahaha!!!!

  59. I have never had coconut milk but this recipe sounds fantastic! Thanks for sharing your post with us at @CCBG.

  60. Hi GiGi,
Yum! They sound so refreshing and would love to try them except I can’t have any citrus. I so make ice-cream & popsicles with coconut milk & coconut flakes. I use coconut milk for quite a bit I love it too. With a little natural sweeteners you can use it to make delicious recipes and I can’t begin to tell you how much organic coconut oil I use on my body and for cooking & baking. So I love coconuts in any form. Thanks for sharing on Real Food Fridays. Pinned & tweeted!

  61. There is always room for coconut lime popsicles in Summer!

  62. Ug, it’s so aggravating when people freak out at me for saying my coconut treats are nut-free. :( Anyway, thanks for sharing your popsicles with us at Allergy Free Thursdays! They sound delish. 😉

  63. Sounds AMAZE!! NOM!

  64. I should turn into a blueberry soon I love them ice cold. thanks for your post

  65. I like coconut milk but I haven’t tried it in a popsicle, just curries and smoothies. Wonder what a curried popsicle would taste like? Thanks for sharing your videos with us at Creatively Crafty #ccbg :)

  66. I can’t believe it’s so easy! With all of my favorite ingredients in one popsicle, who can resist this tasty delight? We’re so glad you shared this healthy and delicious Coconut Lime Popsicles recipe on the Healthy, Happy, Green and Natural Party Blog Hop. I’m Pinning and sharing!

  67. Believe it or not the last items I put in my blender is some garbanzo bean, garlic , lemon, tahini and olive oil to make hummus, in fact it was the last three times. I guess thats my favourite thing to put in the blender as that is a common occurence

    • OMG I FRIGGIN ADORE hummus! Way too much actually, haha! If it were in the house, I would eat ALL OF IT and then go out for Middle Eastern food! haha!

  68. Currently on the Spin bike and I’m biking straight to those vegan donuts, haha! And those coconut popsicles. Wait until I find out they’re not actually on the other side of the laptop and I fall on my face across the bike!

  69. I’m a healthy popsicle lover so I can’t wait to try this one! I am so glad you shared these healthy, yummy Coconut Lime Popsicles with us at the Plant-Based Potluck Party. I’m pinning and sharing.

  70. Featuring this post at this week’s Sunday Fitness and Food Link-up!
Love this simple, easy and fun popsicle recipe GiGi!
    Have a great week! :) :)

  71. I can’t believe how easy it is to make these popsicles ! :)
And you know what?? In 5 minutes I’m getting my new popsicle-molds (the delivery boy is on it’s way).
Line is kinda hard to get here, so in case I don’t find it – I can use lemon right?

    • You could certainly use lemon. I just don’t like lemon myself 😉 But if you do – GO FOR IT!!! Whatever makes this recipe EVEN easier!

  72. I tried making the coconut peach ice cream with almonds and would offer this bit of advice: rather than mix the microwaved peach + amaretto mixture into the ice cream, cook them first with some sugar and amaretto. My first attempt yielded delicious coconut ice cream mixed with chunks of peach ice cubes. Cooking down the water in the peaches beforehand will hopefully solve that problem.

  73. I never tried coconut milk…. I guess it’s time to change that XD

  74. We have been saying we want and try to make our ice cream. Your video looks great and your having fun, Thanks for sharing and I have tried coconut milk for the first time
