I was hired to be the newest baker at one of the Dunkin Donuts franchises right smack in the middle of Los Angeles….

You know who DOES know me (my eating habits anyways)? Sarah Grace of Fresh Fit N Healthy!

If you’ve never been to Sarah Grace’s blog before, when you do, your stomach is going to beat you over the head with your small intestine for not visiting sooner. Sarah is the Albert Einstein of creating the most Vincent Van Gogh-like treats such as “Sleepy Peanut Butter Chia Pudding“, “Mocha Chip Cheesecake ‘Milkshakes’“, “Healthy Cookie Dough Blizzards“,  and “Raw Coconut Brownie Tarts“.

While Sarah Grace may be extremely kitchen creative, there is one thing she had never done before… She had never baked a treat, THAT I COULD EAT!

GiGi Eats Doughnuts

I challenged Sarah Grace to a GiGi Diet Friendly baking challenge, and of course, this kitchen Einstein eagerly acquiesced!

What exactly is GiGi-Friendly? Well the treat has to be FREE OF: wheat/grains, dairy, eggs, gluten, sugar (all forms), soy, nuts and fruit!

Only one other person has been successful in said challenge, and that person is Sarah of!

Sarah Grace slaved in the kitchen, probably wasting a few pounds of coconut flour and stevia in the process, but finally published her doughnut creation and hot damn, do these sweet bagels kick Dunkin’ Donuts ASS (if it had one)!

THE TRUE TEST THOUGH: If they actually taste GOOD! Check out the latest GiGi Eats to see what The Food Pervert (because I needed a DOUGHNUT PRO to help me) and I think of what we like to call the: WTF ARE THEY MADE OF “Donuts”!

I only made a few modifications to the recipe, in that I did not use any coconut milk… BECAUSE I FORGOT TO BUY IT. Ha! I just used good ol’ water!

Lets do the DOUGHNUT:

Sugar, Dairy, Gluten, Soy, Nut Free Donuts!Do you write DOUGHNUT or DONUT?! I couldn’t figure it out! This isn’t a word I use very much!

(FYI: I have never baked with so many ingredients before in my LIFE!)

And here’s what you do with ALL of those ingredients:

  1. Preheat oven to 350 Fahrenheit.
  2. Mix warm water and ground flaxseed together and set aside.
  3. Place all other dry ingredients in bowl.
  4. Mix wet ingredients + flaxseed mixture in separate bowl.
  5. Combine wet and dry ingredients.
  6. Spray doughnut pans with nonstick spray.
  7. Spoon batter into mini doughnut pans
  8. Bake in oven for 20 minutes, or until done
  9. Makes 6 (+ a little extra batter, to snack on) doughnuts

        But I can so relate to reading these yummy sounding recipes that have been healthified, but still have ingredients my peculiar digestive system can’t deal with, and to eat a guilt free doughnut sounds fantastic!

        The part I cant’ relate to is the part where I supposed to actually take the time to shop and cook and prepare delicious sounding treats like this. Sigh. Where is my obedient clone when I need her?

        • I thought my stomach was going to throw a tantrum from the psyllium husk, but there was so little in this recipe, that it was just fine :) You could probably take it out and maybe add CHIA seeds instead.

          AH HA HA! And too funny, I should show you the OUTTAKES to this video because I was definitely bitching about how many ingredients there were in the recipe, LOL!

  6. I haven’t had a doughnut in about 20 years, no lie. I worked at a bakery and we could take home the leftovers. I always felt terrible about throwing them away so I’d take them home by the bagful. I cannot stand the smell of a doughnut now haha. But these? These might just change my mind!

    • I hadn’t had a donut in 13 years so I can relate!!! And aw man, I hate wasting food too! :( But… The doughnuts, are not worth saving… In fact, they will save themselves because of all the trans fat – they’ll never go bad! LOL!

  11. You are too much!!!! I would love to see you working at Dunkin’ :). In the crazy intolerance-friendly circle here, I’ll admit that I won’t be making these soon because I can’t have coconut (wahh), but they will be saved for a few months from now!!! And Sarah Grace’s recipes look amazing!

    • Ah ha ha ha! I would mush all the donuts together and throw them at people if I worked at Dunkin’ Donuts!
      No coconut?!?!?!?! I hate coconut flakes so much, but the flour so some reason is okay wit me, which is AMAZING. You can however use almond flour (if you can eat that)!

    I worked in an Indian restaurant for about 2 years. I never got fired but I left anyway cause the boss of the restaurant was trying to eat me. Seriously. Eat samosas, not me!!

  16. If I were a doughnut I would be an old fashioned…just classic and simple :) Tried working in a restaurant once when I was in my late teens and I was horrible at it. I have zero patience for people trying to order food!! Great recipe by the way :)

    • WOO WOO DONUT PARTY BABY! I got mine at Trader Joe’s – but if you don’t have a TJs, you can definitely get them from Whole Foods or really just travel into the “healthy section” of any grocery store!

  22. Umm Pancakes? IS that even a real question. Waffles all the way but that wasn’t an option. Stevia *shivers*. Hmm What’s a good foo foo Sea salt? I am running out and want a nice gourmet one to feel fancy shmancy in my kitchen. Does erythritol taste like Stevia?     • Oh you and your Stevia aversion! LOL!!!!!! You might like erythritol… Or maybe even Monk Fruit? You should just get little bottles or packets to TRY and see what works for you!

      Oh man, when it comes to Sea Salt… I LOVE “Real Salt” – It’s just so delicious. And trust me, I am a HUGE salt person!

    That’s amazing that she could create this for you with how challenged your diet it! Not as amazing as you are with how challenged your diet is however!

    The most challenging thing I ever made was a key lime pie for my neighbor who had diabetes (Type 1) and was in the hospital for a broken leg. I wanted to bring her a treat :-)

  25. AAAH!!!! This recipe made me freak out with happiness. I love donuts (see I choose that spelling lol) and my guy Dallas loves them MORE. Now I can create a tasty batch that has some great ingredients inside!

    I personally think Donuts can knock the pants off pancakes. I love a good pancake but I feel there are so many crazy creative things you can do to a donut that I just wouldn’t do with a pancake…DONUTS = THE FREAKY PASTRY

    If I were a donut…I’d likely be a crazy combo of sweet and spicy. Like cinnamon and cayenne pepper mixed into the flavoring = ow oowww!!

    I have worked a few restaurant jobs including a Coffee Bean barista. It was a cafe/fast food I guess? I liked Coffee Bean though because working there, I learned how serious they take their coffee (and tea) making. We had to be super exact with how we put together a drink with the right measurements, flavoring, steeping, all that crazy stuff.
    Turned me into a coffee/tea snob!

      • Ah my favorite brand of tea? Well honestly, I love classic Persian tea (or chai as we call it in Farsi). I’ll take that with a little bit of lemon and it’s delicious. Or saffron rock candy dipped into it if I want it sweeter.
        Sadaf’s cardamom tea is probably one of my favorites to get when I want a good classic chai taste.

        I’ve also recently gotten into Davids Tea. When I am craving something sweet, this tea line has some delicious flavors like Birthday Cake. I’ll get the taste I want but not feel bad about eating a whole damn cake. lol!

        • I have seen David’s Tea. I have put flavors in my David’s Tea on line shopping cart, but I never press PURCHASE! I need to suck it up and DO IT. I want to try Birthday Cake sooooooo badly!!!! What other flavors do you rec?!?!?!

    I think the pumpkin is a big reason why those rock. Pumpkin is one of my favorite tastes!
    I have to disagree with Iva in that I’m not big on waffles! I just don’t eat them. I’m a salty breakfast person – give me eggs, bacon and potatoes any day. And some oatmeal. With honey.

  31. Hi, I’ll have a medium turbo hot black, a dozen cream filled and a box of munchkin’s MMM breakfast of champions. You working in fast food places would be a reality show worth watching, kind of like bar rescue but in your case ” Diet rescue” How does someone sit down and figure out how to make something like this, very creative. I mean, wouldn’t they want an employee coming up with counting-out rhyme using every single E number found in their donuts for the little customers. As well as some snazzy new straplines letting people know about the amazing help benefits of doughnuts ;).
    I worked at Subway for about a year – and I had already been vegetarian for a long time then as well as never eaten there before. What can I say? During the many months I worked there I made use of my employee discout … never. Go figure.

It’s my goal to be Kelly Ripa when I get to her age (if not sooner) and I certainly have gotten the comparison a lot, so it means SO MUCH TO ME that you just randomly said that. I officially love you even more and will make you 800000 donuts when you arrive! LOL!!!!

      The reason for all of my restrictions is due to intolerances and allergies – and it just so happens that avoiding a lot of these things is healthy too! Not having a large intestine doesn’t leave me with much ability to process a lot of different food groups, so I just have to avoid them! But honestly, I don’t feel at all deprived – I mean, just look at these donuts! 😉

    We make protein (Designer Whey) pancakes all the time and they are a FAVE 😉 Winners hands-down (until I try to make the donuts, of course!)

    • Do you like any winter squash in general? Butternut or Acorn squash could be great… Or… You could use plantains, do you like those?

  53. I used to work at Dunkin’…. worst 6 months of my life no joke. I can proudly say that I didn’t eat the donuts though but the coffee well yes…. every day. Also donut vs. doughnut always confuses me too! Let’s go with donut because it’s shorter.

  56. These look fantastic!! I had no idea you had so many allergies. So you can’t have any fruit at all? I have never had the SunWarrior protein powder, but I have been wanting to try it. Do you recommend it? It is very expensive or is it about the same price as other protein powders? And yes, I worked at Sonic one summer because I grew up in a very small town and Sonic was about the only place I could get a job. I never once ate any of the food there though. I did make lots of good tips carhopping though. 😉

      AND YESSS! Sun Warrior Warrior Blend (Vanilla) is hands down my favorite protein powder out there, I highly recommend it. It’s vegan and has a blend of delicious vegan proteins too, I cannot wait for you to try it! It is about the same price as other protein powders too.

  65. I like donuts but I rarely have them. I wouldn’t make them because it is only me and the hubby at home and we would end of eating all of them in a few day. When I have a need for a treat, I buy it. I like Spri-tein products because I like their cookie and creme protein powder. Visiting from the #wowlinkup.

  67. Oh, I definitely love both pancakes and donuts!! I haven’t had a donut in quite awhile, they are definitely less healthy than pancakes, but I would totally shove both in my face, lol! Does the stevia leave a weird aftertaste?? That has always been my issue with it and it gave me headaches :( I’ve heard the liquid stevia is better…do you know? Since you don’t eat sugar, you may not want to look at the butterfinger Ice cream I posted, LOL! :)

    • Honestly, I have been using stevia for 13 years so to me, there is no weird aftertaste. Tara didn’t taste one either, and as you know, she’s the food pervert – so if she says they’re really good, then they must actually be, really good! LOL!

      If it gives you headaches though, I wouldn’t advise you use it. What brand have you used? Sometimes stevia is mixed with other ingredients which could be causing your headaches :(

  75. Gigi! I totally bought your Dunkin Donuts story because I worked at Papa Murphys Pizza in HighSchool and had a total problem eating the dough there. I would definitely try this recipe though because I don’t have the metabolism I had in HS anymore. Love your pics and how you write – also, I say ‘Donut.’ It’s easier.


    • Ah ha ha! Did you get fired because you ate too much dough??? 😉 If I did work at one of those places, I certainly would get fired, but I resisted from working at any tempting restaurant!

  82. I love donuts! We don’t have Dunkin Donuts in Australia but we have Donut king and they made freshly made cinammon donuts which are to die for!

    Mm talking about donuts, I want to eat them now!

    Do you think that all the ingredients were necessary in this recipe? Or if there was a way to cut it down to less?

    • Personally I don’t think you need the baking soda or powder! It’s so funny that you mention the amount of ingredients because I remember when I was making this recipe, I was like “WHY SO MANY ingredients”!! HA HA AH! You and I think alike 😉
