A little while back, The Good Chocolate approached me and thought it would be a TASTY idea if we partnered together to create a NEW flavor of chocolate (to add to their already delicious variety of flavors) that just screams, “GIGI”!
I knew IMMEDIATELY this bar needed to be “milk” chocolate, without the milk…
Enter: Coconut milk.
What ALSO entered into the equation were SPRINKLES because whenever I see sprinkles, I feel… An emotion I really cannot describe at all. Let’s just call it elation!
Unfortunately, sprinkles (that were sugar-free) left the party early on in the creation phase of this chocolate bar… As they didn’t lend anything but a bit of expensive beauty to the bar. What took the sprinkles place, however… Brings on the same said sprinkle emotion yet elevates it to a whole other level… And lends pockets of crispy sweet flavor that will leave you wanting more.
This “sprinkle ribbon” (which we dubbed crispy crystals) consists of aquafaba, the liquid from chickpeas (keeping this bar consistent with the vegan theme), and erythritol.
To add to the crunch of the bar, since it’s called “double crunch”, we swirled in cocoa nibs to balance out the sweetness from the crispy crystals and heighten the already insanely healthy bar’s nutritional profile as cacao nibs are teeming with antioxidants!
