Landon, my husband, for whoever is new around here, has PROUDLY confessed that his palette TWINS hardcore with… A stereotypical nine-year-old boy’s palette.
Here’s the short list of his all-time favorite eats…
- Ooey, gooey cheeseburgers, with NO TOMATOES or ONIONS (because get that HEALTH OFF THE GOODNESS) smothered with pepper jack cheese and smashed between two processed potato buns.
- 16-inch PERSONAL pizzas stacked MILES HIGH with processed meats like pepperoni, sausage, and bacon.
- Pasta Alfredo with Chicken (and broccoli, which is NOT something 9-year old boys generally like, so SCORE ONE for Landon?) with a sauce made with EXTRA cream, butter, and cheese, that, let’s be real, is not from grass-fed and finished cows. - Strawberry Shrimp… Or in other words, deep fried shrimp, covered in high fructose corn syrup, MSG and artificial strawberry flavoring.
- And those damn dinosaur shaped chicken nuggets that you can find “smiling” at you as you walk down the freezer section of your grocery store.
You can’t tell me these meals don’t make you think of a nine-year-old boy’s palette…
And let’s just say when meal time rolls around and I try to suggest healthier options… I tend to get a tantrum that ALSO resembles a nine-year-old as well.
That being said… I was SHOCKED when Landon eagerly agreed to try and re-create one of his favorite eats at HOME with me… Using HEALTHIER ingredients.
I quickly took his temperature and was even thinking about getting him a psychiatric evaluation.
I kid, I kid. Kind of.
Anywho… Another dish that Landon is rather fond of and typically orders with his high fructose corn syrup, MSG and artificial strawberry flavoring (i.e. Strawberry Shrimp) is… Chicken Fried Rice.
Not exactly health food…
Unless you doctor it the way Landon and I did, using Floating Leaf Fine Foods.

- 1 Cup Floating Leaf Wild Rice with Black Beans
- 1 – 12 Ounce Bag Frozen Peas & Carrots
- 1 Pound Thin Chicken Breasts, diced
- 1 Leek, white part only, chopped
- 3 Large or 4 Small Cloves of Garlic, minced
- 1 – 2 Tbs Avocado Oil
- 2 Tbs Sesame Oil
- 2 Whole Eggs
- Tamari Sauce, to taste
