I cannot FORKING BELIEVE it’s already FALL.
Yep, Labor Day passed… So I am classifying it as Fall RIGHT NOW (here in the Northern Hemisphere that is). September 22 can suck a nut.
I never even ONCE made ice cream during the scorching hot days of summer. Scorching is actually kind of an understatement for how hot was in Los Angeles this past summer…
It was hotter than Satan’s balls in a jock strap after playing rugby for 5 hours.
“LUCKILY” for me… The weather doesn’t really get all that much cooler in September…
And FORKIN’ A… Football season is upon us… Which means Satan is probably going to want to try playing THAT SPORT in his unsanitized jock strap too.
Well fine then. If you go on and rub your man berries together while running up and down a field (i.e. keep the weather in LA hot AF… Because I guess you took Mother Nature’s job? What is she on vacation?), Satan… I can totally get away with making ice cream despite it not necessarily being a FALL FOOD.
But wait, I don’t need your forking approval… I make my own rules… I mean, I wear white after Labor Day too, so… SUE ME.
This all being said, since you, Satan, changed the sport you’re playing, from a summer sport to a fall sport… I guess I will have to do the same in the ice cream department… So instead of making a “summer-flavored” ice cream…

NO-CHURN PUMPKIN ICE CREAM… To be exact… Because my ice cream maker heard it was “officially” Fall… And decided to go into hibernation.
Eh, my lazy ice cream maker doesn’t deserve any hostility… And honestly, perhaps Satan doesn’t need any of it either… Well, that is… If this no-churn ice cream (that I never made prior to filming the latest GiGi Eats) works out… Because well, then I have a way to cool myself down, EVERY SINGLE DAY!

NO-CHURN PUMPKIN ICE CREAM
(Free Of Gluten, Sugar, Soy, and Nuts… It’s also Vegan, Keto and Paleo Too!)
- 2 Cups Lite Coconut Milk (whole can) + 4 Tbs (if you have no patience to let the mixture melt – see the video for explanation)
- 1/3 Cup Erythritol
- 1 1/2 Tps Vanilla Extract
- 1 Tsp Cinnamon or Pumpkin Pie Spice
- 1 Cup Pureed Pumpkin
- 2 Tbs Maple Vanilla Choc Zero Syrup (see the video for explanation)
- Sugar-Free Chocolate Chips, optional
