Stuff yourself with some Salmon Stuffed Mushrooms!
What You Need To Make Salmon Stuffed Mushrooms:
- 5 Mini Bella Mushrooms, stem removed
- 1/2 Cup Shallot, minced
- 1 Cup Zucchini, chopped
- 1 Cup Spaghetti Squash (I used frozen)
- 1/2 Tsp Garlic
- Salt & Pepper, to taste
- 1 Tbsp Nutritional Yeast
- 1 Tbsp Mustard
- 5 Ounces of Skinless Salmon, chopped
- Parsley, as garnish
How To Make This Recipe:
- Preheat your oven to 375 degrees.
- Remove the stems from the mushroom caps, place on a lined baking sheet and then bake in the oven for about 12 minutes.
- As the mushrooms soften in the oven, sauté the shallots, zucchini, spaghetti squash, garlic, salt and pepper in a shallow skillet until cooked through, about 5 – 8 minutes.
- Add the contents from the sauté pan to a large mixing bowl. Then add the nutritional yeast, mustard and salmon.
- Mix everything in the bowl together.
- Keeping the mushrooms on the same baking pan, stuff each cap with the salmon mixture and then place back in the oven and bake for about 15 minutes.
- When done, sprinkle with a little parsley and salt and stuff yourself!
