Stuff yourself with some Salmon Stuffed Mushrooms!

  • 5 Mini Bella Mushrooms, stem removed
  • 1/2 Cup Shallot, minced
  • 1 Cup Zucchini, chopped
  • 1 Cup Spaghetti Squash (I used frozen)
  • 1/2 Tsp Garlic
  • Salt & Pepper, to taste
  • 1 Tbsp Nutritional Yeast
  • 1 Tbsp Mustard
  • 5 Ounces of Skinless Salmon, chopped
  • Parsley, as garnish

How To Make This Recipe:

  1. Preheat your oven to 375 degrees.
  2. Remove the stems from the mushroom caps, place on a lined baking sheet and then bake in the oven for about 12 minutes.
  3. As the mushrooms soften in the oven, sauté the shallots, zucchini, spaghetti squash, garlic, salt and pepper in a shallow skillet until cooked through, about 5 – 8 minutes.
  4. Add the contents from the sauté pan to a large mixing bowl. Then add the nutritional yeast, mustard and salmon.
  5. Mix everything in the bowl together.
  6. Keeping the mushrooms on the same baking pan, stuff each cap with the salmon mixture and then place back in the oven and bake for about 15 minutes.
  7. When done, sprinkle with a little parsley and salt and stuff yourself!
