GAH! Writer’s BLOCK! Yep. It happens to me every so often…
Be honest with me, who doesn’t suffer from writer’s block here and there?!
And while I had MANY conversations with “my imaginary friends” about how to start this post off… I just wasn’t a DIGGIN any of the ideas.
I mentioned my suffering from this BRAIN FREEZE to my husband, Landon… Who then asked me what this post was to be about. I glared and then rolled my eyes at him because, um, well, he should very well have KNOWN what this post is to be about considering he helped me set up the video camera so as to film the video explaining what I was making.
Ohh… But you know, men.
It felt like deja vu when I elucidated to him AGAIN that I made a NON-DAIRY ICE CREAM PIE with a VEGAN and KETO-FRIENDLY GRAHAM CRACKER CRUST smeared with a healthy helping of lusciously creamy SO DELICIOUS DAIRY-FREE NO SUGAR ADDED COCONUT MILK FROZEN DESSERT that was whipped together with hunks of KETO-FRIENDLY GRAHAM CRACKERS.
Oh, and of course, I also had to emphasize my use of SUGAR-FREE SPRINKLES, because I mean… Sprinkles, people. SPRINKLES.
Now I would have SHOWN said pie to him, to further remind him of my creation but… My mouth happened to really love this dessert… So yeah, that wasn’t possible, if you know what I mean.
When done describing my tasty masterpiece… Which actually led to a bout of sadness that my pie was no longer… Landon said I should start this post by saying…
“You’re the apple to my pie”… Because he knows I love puns.
But um, huh?!
“Apple? Where in my description did I say ANYTHING about apples?” I questioned.
He wasn’t looking at The Chive when I told him about what I made, so I know he was at least 1/2 listening to me.
He then explained, “you heard me correctly… There are no apples in your recipe and you didn’t make a pie. So, in true Genevieve (he calls me by my full name) fashion, you could talk your way out of this pun and lead into what you actually made.”
“Thanks……. But hold on a hot minute?! If you didn’t even remember what I made… How can you tell me I did not make it?” I retaliated.
He then googled the definition of pie and read, “a pie is a baked dish which is usually made of a pastry dough casing that covers or completely contains a filling of various sweet or savoury ingredients. Sweet pies may be filled with fruit, nuts, brown sugar or sweetened vegetables.”
And while Landon was trying to prove HIS point… I tried to prove MY point by ALSO turning to google to show him that ice cream pies are PIES TOO.
So… Can you guess who won this little squabble?
Sure… Landon won this one on a technicality… Because nowhere in the dictionary does it state that a pie is comprised of ice cream… But in all actuality, I won because… I got to wolf down my SO DELICIOUS DAIRY FREE dessert and didn’t have to share even one single bite with him.

ICE CREAM PIE STUDDED WITH GRAHAM CRACKER PIECES AND SUGAR-FREE SPRINKLES
FOR THE CRUST:
- 1 Cup Coconut Flour + 1 Tbs Cinnamon OR 1 Cup Keto Queen Kreations Cinnamon Coffee Cake Mix
- 1/2 Cup Brown Sugar Swerve
- 1/3 Cup + 2 Tbs So Delicious Unsweetened Coconut Milk
- 3 Tbs Butter-Flavored Coconut Oil
- 1 Tbs Graham Cracker Flavor Extract
FOR ICE CREAM:
- 1 Pint So Delicious No Sugar Added Vanilla Bean Coconut Milk Frozen Dessert*
- 1/2 Recipe of my Cinnamon Graham Crackers with Rainbow Sprinkles Recipe, optional
- Sugar-Free Sprinkles, optional
*You could use any frozen dessert that So Delicious has to offer as they have a multitude of varieties and flavors including, Bananas Foster Cashew Milk, Mocha Almond Fudge Almond Milk, Peanut Butter, and Raspberry Oatmilk, and Chocolate Velvet Soymilk!
