We just marched right into March like we own the damn month… Right?!
Er, um, not so much.
I was over here thinking, what in the FORK do I post this week… Which is a VERY rare occasion for me… But a lot has been going on in GiGi-Land lately.
Sure, St. Patty’s Day is coming up… So I could have posted something “Irish-themed” this week… Or I could have done a post-Oscar‘s inspired dish that would have made you feelin’ fancy AF.
It’s also Frozen Food Month and National Nutrition Month… So yeah, this week’s recipe could have been influenced by those “holidays” as well.
Who in the FORK comes up with this shit?! Where can I submit National Salmon Day… For June 26th?

That being said… While I certainly just got loads of ideas for what to post for the rest of the month (National Chicken Noodle Soup day is next week so perhaps I’ll warm you up with a GiGi-approved version… Eh, don’t hold your breath)… This week’s recipe is unrelated to any “holiday” that seems to be coming and going at lightning speed.
But seriously, this year… The FORKING, FORK. Why is it running as fast as a humming bird?

I just randomly decided to google “national food holidays” for the month of March, and so it seems that, March 11th is… National “EAT YOUR NOODLES DAY” and um… The recipe I am sharing with you today (because my Africa rambling is officially over)… Includes “noodles”! So perhaps I subconsciously just KNEW a “noodley” holiday was coming up… And now that I look through this food “HOLIDAY” calendar, I am seeing that National Artichoke Heart Day is coming up on the 16th… And MY RECIPE includes those furry babies as well.
I’m feeling so friggin’ festive.
MIND…. BLOWN!
Ah yes, National Peanut Butter Day… Yep, that’s this month too according to the calendar I am looking at right now, but no peanut butter was involved in the making of this dish… THANKFULLY… Because um, that addiction spread plus artichokes sounds grosser than Megan Fox and Jennifer Lawrence‘s rumored bathroom habits.
What’s not gross though… Well, at least to my friend Caroline and I… Is the unplanned creation… We randomly decided to make the morning we blocked out in order to film my latest YouTube video… I have cooling off for you below (I don’t want you to burn your mouth, you ARE welcome)… Despite not having a clue what the heck we were getting ourselves into.

VEGGIE NOODLE PIE
- 1/2 Steamed Spaghetti Squash (here’s how to cook it)
- 1 Whole Zucchini, Noodle-Style
- 1 Scoop (Natural Flavored) Protein Powder
- 2 Eggs
- Salt & Pepper (for both crust and tomato sauce)
- Garlic & Oregano, as much as you dang well please
- 1 15-oz Can of Tomato Sauce
- 1 Tbs Tomato Paste
- 3 Tbs Diced Black Olives
- 1 Can Quartered Artichoke Hearts
- Garlic, to taste
- Lots of Basil (Dried or Fresh, diced)
